Production Process

Leaf Removal and Washing

These operations are carried out in sequence, using conveyor belts and a washer equipped with a destoner. The goal is to remove all impurities from the olives, whether they are of plant origin (leaves, twigs) or mineral (dust, soil, stones).

Grinding & Malaxation

This operation involves the continuous and slow mixing of olive paste.  Malaxers have an internal stainless steel wall, usually semi-cylindrical in shape, with either a vertical or horizontal rotating axis. They are equipped with a heating system, which can be either electric resistance or warm water circulation, with the temperature not exceeding 27°C, in an outer jacket. 

The release of oil from the plant tissues it contains begins with the grinding of the olives. This operation aims to shred the cells of the pulp and release the oil droplets from the vacuoles.

Centrifugation

Centrifugation is a widely used method because it overcomes many of the drawbacks associated with extraction by pressing. The olive paste is subjected to centrifugation in a conical drum rotating on a horizontal axis (decanter). This process is carried out at a rotational speed of approximately 3400 revolutions per minute.
